Future Kenny, you are in luck, this article explains how to force SMB to use version 2.0.
Why? Why do you want to do this? SMB 1.0 is vulnerable to EternalBlue mutations, and Windows rejects connecting to it since April 2018, when ransomware that used this exploit propagated to big multinational corporations, banks, hospitals and schools. Microsoft did well actually.
After that shares should be mountable on any Windows machines.
